herb-crusted salmon whirls
Makes: 36 to 40 pieces
Use a loaf of whole-wheat sliced bread, not the extra-wide, as the bread will be rolled out and made slightly larger anyway.
16 slices whole-wheat bread, crusts removed
8 ounces whipped cream cheese
1½ teaspoons horseradish
½ cup chopped smoked salmon
¼ cup small capers
¼ cup green onion, minced
½ cup flat-leaf parsley, minced
¼ cup dill, finely chopped
Using a rolling pin, flatten bread and square off with a knife. Set aside.
In a small bowl, using a fork, combine cream cheese and horseradish.
Add in salmon, capers, and onions until smooth.
Evenly spread the mixture over each bread slice and cover to the edges.
Roll up each slice tightly.
Cut each roll crosswise into ½-inch thick slices.
Cover with plastic and chill for 2 hours.
When ready to serve, mix together parsley and dill and gently pat each rolled piece on one side into the herbs, and serve.
